They may seem kind of "boring" since they're so common, but I like neon tetras and black neon tetras in that type of setup. I'm also a fan of emperor tetras (Nematobrycon palmeri), but they're much harder to get hold of (at least around here) and they can be a little more aggressive to each other ...

Probably not an answer you're looking for, but...
My bushynose stopped breeding, and I think it's because some of their tankmates started breeding and chasing all the other fish around the tank. So: in place of one problem, I have a different problem.

I leave powerheads on, but I've had to play around with where to feed the the tank to prevent food from getting from getting stuck on inlets or on sponge filters. Even though the food flies around when I feed in these places, it eventually settles somewhere on the substrate. So I have one or two ...

I would second Donpetty on the assassin snails being catfish-safe. (Sorry, I know you said you didn't want them!) We haven't kept any loaches in our smaller tanks because they can pester calmer fish.
It's kind of a pain because you have to set it up and empty it, but I use a snail trap like this ...

What brand of metronidazole did you get? Is it just metronidazole powder or food that has metronidazole in it? You can feed metronidazole food OR dose the water with pure metronidazole - both should work. I generally don't suggest feeding the metronidazole because most fish that need it won't feed ...

Depending on your tank conditions, Vallisneria might be worth a shot too, and I second the floating plants suggestion. I'm not sure whether Rid-Ich will help. We don't usually use it since it can be very toxic to some fish, like tetras (though angelfish seem to handle it well). The only experience I have with it is for treating ich.

Your angelfish may have a hexamita infection that's causing hole-in-the-head disease. The pitting on her forehead is pretty characteristic of this, so the mouth/jaw damage might be another manifestation. There are other causes for this type of damage, so that's just a guess.

If you're calculating aquarium volume from measurements in cm:
1 cubic cm = 1 mL, or 1000 cubic cm = 1 L
So a 60x30x30 cm tank is 54,000 cubic cm, or 54 L.
To convert to US gallons, divide by 3.8. This gives ~14 US gallons for the 60x30x30 cm tank.

It might be columnaris. In my experience, columnaris doesn't clear up with Maracyn (erythromycin). (I don't know if some strains are more or less resistant to the drug?) I've had better luck with kanamycin, or kanamycin + furan-2.
